Asterisk will use whatever codecs you specify in iax.conf (or
iax_rpt_custom.conf depending on what flavor you are using).  Within
[radio], one typically begins with a "disallow=all" to override any
system-wide defaults that may exist, followed by one or more "allow=xxxx"
where xxx is the codec (e.g. ulaw, alaw, gsm, etc.).

As far as what codec is currently being used for a given channel (a "link"
to another server/node is made via an IAX2 channel), use "iax2 show
channels" from the Asterisk CLI.
