I thought I should answer my own question here.
I've done some Google research on using SIP devices behind a NAT router
and found some specific info on the SPA-2000.
Long story short, a firmware upgrade and some tweaks to some settings in
the SPA-2000... it seems to work very nicely now.
Fantastic fun indeed!
